Your new favorite pancakes
We stopped buying pre-made pancake mix long ago thanks to this INCREDIBLE and easy homemade pancake recipe. They’re light and fluffy and make a large enough batch for our fam of four to eat breakfast and still have leftovers (I wrap these up and will freeze, toasting them whenever the kids want a pancake next).
You’ll need:
1 1/2 C flour
2 tbsp butter, melted
1 1/4 C milk (We use raw milk)
1 tbsp Baking powder
1 egg
1 tsp salt
Splash of almond or vanilla extract
1 tbsp sugar
Start by combining your dry ingredients in a mixing bowl. In a measuring cup, measure the milk first, then add the egg and extract. Mix together, then add to dry ingredients. Stir a few times just to start combining. Next, add the cooled, melted butter.
Stir until just combined, you don’t want to over-mix.
Heat a pan, adding a little butter if necessary. Cook a few pancakes at a time, flipping when golden. Top with real maple syrup or some fresh, homemade whipped cream and fruit.
